Description
This is a very easy and fast meal but tastes wonderful. Using only one pan you can simply fry the chicken and remove it then make the sauce and finally put the chicken back in the pan and thoroughly heating it while adding the Parmesan cheese. Ready to serve in just 20 minutes.

Prepare the chicken thighs and season with salt & pepper.

Gently heat the olive oil in a large frying pan then add the chicken and sauté until golden brown both sides (approx 4 minutes each side). Remove the chicken from the frying pan and place it close by.

Next, fry the minced garlic for about 1 minute. Add the mushrooms and cook until they start to brown. Turn the heat down to low and add a little salt & pepper then the heavy cream.

Slowly add the spinach to the cream then simmer to reduce the sauce.

Slowly stir in the Parmesan which will thicken the sauce. Add as much as you need to make the sauce how you like it. Cheese is very Keto friendly. :)

Add the previously cooked chicken and mix into the sauce for 2 to 3 minutes so everything is hot.

Your Keto Alfredo Chicken is now ready to serve. Grate a little Parmesan on top and then finally, sprinkle with chopped parsley.
