Keto Blueberry Pancakes with Bacon

Description

Keto Blueberry Pancakes with bacon. A delicious breakfast that feels like you are cheating but you are not. They are only 6 grams of carbs per serving!

Ingredients

Cooking Instructions

  1. Precook the bacon in the microwave or under the grill.

  2. Mix together the eggs, almond milk ricotta cheese and vanilla extract in a blender.

  3. Put a little butter in a skillet over a low heat.

  4. Mix thoroughly the almond flour, baking powder, flax seed meal, salt and stevia powder in a bowl then gradually add to the blender until smooth.

  5. Increase the heat of the skillet slightly and add a little more butter as necessary. Add 2 to 3 tablespoons of the batter for each pancake and flip when slightly brown.

  6. Once flipped you can add around 4 or 5 blueberries to each pancake.

  7. Serve each pancake with a strip of bacon and sugar free syrup as desired.
